手いっぱい。大信州セミナー / Handsfull. Daishinshu Sake seminar


先週は、「インターナショナル・ワイン・チャレンジ(IWC)2010
のSAKE部門の入賞酒の表彰式がロンドンで行われ、
入賞された蔵元の皆様とお会いする機会をいただきました。
そのひとつの蔵、長野の大信州酒造の田中様が、
ZUMAに日本酒セミナーのため来てくださいました。

Last week there was an award ceremony for "International Wine Challenge (IWC) 2010" in London.
There are Sake category in this competition and I've got to see many breweries selected to this award came all the way from Japan.
One of them, Tanaka president of Daishinshu Breweries Inc. came to Zuma for Sake seminar.

持ってきてくださったお酒は3種。
現在ZUMAの季節商品で取り扱い中の「別囲い純米大吟醸」、
「厳選純米吟醸山田錦」、そして写真の右の「手いっぱい 純米大吟醸」が
IWC2010のゴールドメダル受賞酒です。

He brought three different Sake;
"Betsugakoi JUnmai Daiginjo", which we currently have on the seasonal menu,
"Gensen Junmai Ginjo Yamadanishiki",
and Gold medal award-won Sake for IWC 2010,"Teippai, Junmai Daiginjo".


「手いっぱい」という名の通り、彼らのお酒作りは
手をかけられるところは全てかけた自信作。
大信州のお酒は全てびっくりする位フレッシュで洗練されていて、
デリシャスアップルとも言える凝縮した果実味いっぱいでした。
田中社長は私たちに、人間の都合ではなく、酒の都合で酒造りをすることの大切さを教えてくださいました。
「私たちの蔵に来て搾りたてのお酒を唎いてもらえたら、
ここにいる全員を感動させられる自信があります」
穏やかに、しかし力強い口調で田中社長は語りました。
「しかしその感動を蔵から離れた食卓やレストランで同じ様に感じてもらうのは難しい。
そこの距離を縮めていくのが、今後の私たちの課題です。」
常に次の課題や手をかけられることを探る姿勢と情熱に、心を動かされました。

"Teippai", literally means "Hands-full" in Japanese.
All the Daishinshu Sake commonly had amazingly fresh, sophisticated, and condensed fruity flavors such as delicious apples.
Mr. Tanaka talked us about how much they had cared for their sake from growing rice crops to bring them to the table.
Sake production is exhausting, he said. But if we thought about its best,  they will give us back.
"If you come visit our brewery in Nagano, I am 100% positive that I can amaze you by our freshly brewed Sake." he continues, "However, it is not always easy to feel the same way if you taste them on the table at home or restaurant which are far away from there. Our focus at this moment is to shorten the distance between."
Gently but strongly, Mr, Tanaka passionately showed his next target to care for.
I felt very honored to present their sake at this restaurant.
