Paris is...3


I went to the cuisine Zuma's Head Sushi chef, Endo san introduced me,
and it was coincidentally owned by Mr. Eichi Edakuni, who was captured in "Jonetsu Tairiku",
a famous documentary show in Japan a few years ago.
He opened the 2 Kappo restaurants in Kyoto named "Giro Giro Hitoshina",
and then closed one to open "GuiloGuilo Cuisine Japonaise" in Paris.
Within the show, it was before and after he opened the restaurant,
he was struggling with the French suppliers and customers
without knowing the language and its culture there.
Again, it was a coincident, but I was quietly ecstatic .

ZUMAの大将、遠藤さんに紹介されてやってきたみた。
そしたら数年前に情熱大陸で偶然みた、
枝國 栄一さんのお店でした。
京都で「枝魯枝魯ひとしな」という割烹料理屋を開き、
2店舗あったうちの1店舗をたたんで2年程前、
果敢にもPARISに出店した「くずし割烹 枝魯枝魯(ぎろぎろ)」。
番組では、オープン前後の全く言葉も文化もわからない中
業者やお客さん相手に格闘する彼の姿が紹介されていました。
だから偶然いったのに、一人で感極まる。


店内は、全てカウンター席で20席もありません。
19時からと21時からの2回転。
もちろん、全て満席でした。
The restaurant was all counter and had less than 20 seats.
and two sessions from 7pm and 9pm.
it was fully booked.

Sesame tofu and sea urchin, and monkfish liver
胡麻豆腐と雲丹、 あん肝



出汁巻き卵とブロッコリーのすり流し、蟹肉を添えて
Dashi-maki omelette, with potage of Broccoli and crab meat


Mr. Edakuni was so busy at the store answering unstopping phone rings and
communicating with customers. in amazing French language.
枝國さんは、ずっと鳴り続ける電話の応対、
お客さんとの会話で大忙し。彼のフランス語は、素晴らしかった。

O-toro Sushi, with mushroom and tororo sauce on top,
and pickled Japanese pear instead of ginger.
マッシュルームととろろ芋のソースをかけた大トロ寿司
ガリの代わりに和梨の酢漬けを。

tatsuta-fried fin of Ray fish, onion sauce and leaves, Yuzu sorbet on top
エイヒレの竜田揚げ、オニオンソースに柚子シャーベットを添えて

mustard lutus root tempura
辛子蓮根の天ぷら

sea bream rice soup.
Dashi stock was just beautiful.
出汁が素晴らしかった鯛雑炊。 

Green tea financier and Chocolate bavarois, 
apricot Kuzu-jelly.
抹茶のフィナンシェにチョコレートババロア、 杏子の葛寄せ

The food looks amazing. Paris looks wonderful, i can't wait to be there for Christmas. It will be cold! Brrrrr.

thank you Clouds! yes i think Paris is the best in Christmas season since it has so much romance and melancholy in that city.
i am looking forward to come back!
