Akita NEXT5 Tour Vol.3 Shirataki / 白瀑

ここはアメリカ?


No, it wasn't.
This is Yamamoto Gomei Co., the brewer of Shirataki.
Behind the brewery, there is Shirakami-Sanchi, registered mountainous area by
UNESCO World Heritage Site in 1993.
Today the brewery produces 820 Koku (82,000 magnum bottles) per year.

なんてことは、ありませんでした。
秋田県の北西部、青森との県境に位置する
白瀑(しらたき)の醸造元、山本合名会社さんへやってきました。
蔵の裏山は、1993年にユネスコの世界遺産に認定された白神山地!
現在の蔵の造りは年間820石(一升瓶8万2千本)。



"Executive director, Grower and Brewer"
as Mr. Tomofumi Yamamoto titled himself, 
His Sake production takes the most advantage of its abundant natural resources.
Water comes the first. 
Their water supply come directly from the middle of Shirakami-Sanchi's Yakushi mountain,
and this super-soft spring water is used for all part of the Sake-making.
Natural purification makes water germ-less,
And its smaller molecules of water is perfect to combine with alcohol and
easier to make Sake in the best drinking condition.

杜氏制を廃止し、自ら製造の総責任者を担う山本友文さんは
「常務 栽培醸造家」という自らを名乗っています。
その肩書き通り、彼の蔵のこだわりは豊かな自然資源を最大限に生かした酒造り。
まずは、なんと言っても
白神山地の薬師山中腹から湧き出た超軟水の天然水を
直接蔵までひき、酒造り全ての工程で使用しています。
自然の浄化力でほぼ無菌。そしてアルコールと結びつきやすい細かな分子の水質が
お酒を澄ませ、味のりをしやすくしてくれるそうです。


And then, the Rice.
Unfortunately we forgot to stop by his rice field by chatting too much in the car,
He rented 1,287 square meter of terraced rice fields in the area and produces rice.
The same spring water I explained above is also used for rice making.

そして次のこだわりは、
残念ながら今回山本さんの棚田には伺えませんでしたが、
(おしゃべりに夢中で車で通過するという惨事)
一町三反(棚田14枚、390坪)の田んぼを借りて酒米を栽培しています。
もちろん上で紹介した天然水を米造りにも使っているとのこと。
上の写真は、脱穀機。


And this is rice drier machine, named "Dry Boy"! lol
I've seen rice thrashing or polishing machines in Sake breweries but never the drier.
It comes from the reason that drying rice after harvesting is greatly important
to prevent cracking rice when polishing and washing rice.
With this machine, he dry the Sake rice which is much bigger than the table rice in size
in three different stages. The water amount in rice drops from 22-25% to less than 15%.

そしてこちらは、お米の乾燥機、その名もドライボーイ!笑
脱穀機はあれど、乾燥機まで持っている蔵元さんはなかなかいないのでは?
精米や吸水時のお米の割れには、肥料のやり過ぎや収穫時の刈り遅れに
原因があると言われていますが、
それと同じ位、刈り取り後の丁寧な乾燥が大事なのだそう。
この機械を使って、食用米より粒の大きな酒米を三段階乾燥させ、
お米の収穫時に22〜25%あると言われる水分量を15%以下まで落とします。



山本さんの田んぼの半分は無農薬&無化学肥料使用の有機栽培米。
こちらは雑草取りに使われる道具だそうです。

this is a tool for weeding in the rice field, great partner 
for his organic rice crops, without any pesticide or chemical fertilizer.
The half of rice he produces is organic.


The MJP rice washing machine, same as Harukasumi!
It washes rice so softly with the cushion of bubbles. used for Koji rice.

春霞さんに続いてこちらにも!
気泡のクッション作用で優しく洗うMJP洗米機。麹米に使っているそう。


Rice steamer also wears Shirataki brand.
甑も白瀑色を身にまとっています。


And the third secrets of Shirataki brand is
The Beatles. Mr. Yamamoto's favorite band.
Their music is playing 24 hour in the brewery and I found their posters all over.
I'd known the brewery playing classic music to activate the fermentation
yet never the Beatles! 
This means to uplift the brewer's motivation during their long and hard rice and sake making 
throughout the whole year. "I want everyone to 'enjoy' their work" says Mr. Yamamoto.

そして魅惑の白瀑ブランドの秘密三つ目は、
24時間蔵で流れているビートルズ
蔵の至る所にもビートルズのポスターが貼ってありました。
健康な醪を育てるためにクラシック音楽をかける蔵、というのは知っていますが
これは大のビートルズ好きという山本さんならではの取り組み。
一年を通して米造りと酒造りに追われる、蔵の方々のモチベーション維持と
「楽しく酒造りをしよう」という山本さんの経営姿勢でもあるそうです。




You cannot see well in the photos, but there were four scales in each corner of this table
so that you can measure the weight of rice.
iRobot cleaner Rumba was so popular in Japan when I was there,
and I found one in his Koji room as well.

写真ではよく見えませんが、この麹床の四隅にはかりが設置してあり、
お米の重量を量れるようになっていました。
日本で何処に行っても見かけたロボット掃除機のルンバくん。
こんなとこにも居ました。


Sake making room.
there are pipes above tanks running 3 degree water.
Blue tanks are for the Junmai Sake, 1-1.5t in size,
and green ones in the back is for Junmai Ginjo and Daiginjo class, 600-800kg in size.

仕込み蔵。
3℃の冷水が上のパイプを通って温度を管理しています。
青色のタンクが純米で1〜1.5トン仕込み
奥の緑色が純吟、純大用の600〜800キロ仕込みタンク。

My first time to see the tool to close magnum bottle caps.
一升瓶のキャップを締める機械。始めて見ました。



Mr. Yamamoto studied Mechanical Engineering at university in the USA,
and then worked in music production company in Tokyo
to manage artists like Risa Ono and THE BOOM.
However he had to take over the business by family's issues 10 years ago,
and used his experiences in different back ground and his creativity to rebuild the Shirataki brand.
For example, he created a un-pasteurized Nigori (= cloudy) Sake named "Do"
because his employee had to stay in the rice production until December and
still have sell some products in January.
So he just filtered still fermenting Moromi mush with strainer and bottled without pasteurization.
At beginning it exploded at restaurant and homes (because the sake was still alive!)
and he received enormous amount of complains from the customers.
but many of them said that "it tasted good". he continued to improve the safety and
made it to the super popular brand.

アメリカの大学で機械工学を専攻された後、
東京の音楽事務所で、小野リサさんやTHE BOOM等の
アーティストマネジメントをされていたという異色の経歴を持つ山本さん。
ご家族の都合で突然蔵を継ぐ事になり、大変な苦労をされたと察します。
そんな中でも、持ち前のご経験やクリエイティビティを持って経営でも工夫され、
この10年で蔵を建て直されました。
米造りのため12月入りされる蔵人体制の中で、
それでも1月に売れる商品を、と生み出したのが生生にごり酒「ど」。
発酵中の醪をザルで漉して瓶詰めしただけだったので、
最初は販売先で爆発しまくりクレームの嵐だったとか。
それでも「味は良い」というお客様の声を信じ改良に改良を重ね、
今や大人気商品に。

But it is not only his brewery that surprised me...
しかし凄いのは、彼の蔵だけではないのです…

そう、師やまもとようこさんのブログ
「崖の上のトモ」と称され登場した、山本さんの新居!
(※ご自宅は英国のABBEY ROADではありません。)



How wonderful view. I saw the moon poking its face from the mountain behind the house.
この絶景!この時間、ご自宅裏の山からお月様が顔を覗かせていました。



Communal changing room and big dining and living room,
his children's study table are sent outside of individual rooms.
He told me he designed his house "as less individual space as possible".
The warm woody house was filled with his family's lively voice.
Thank you Mr. Yamamoto to welcome me on my sudden visit!

男女に分かれた共同脱衣所に大きな食卓&リビングルーム。
お子さんの将来使う勉強机も小部屋の外に設置するなど
家族共同のスペースが大半を占めるお家、素敵!
木のぬくもり溢れる家の中は、山本さんご家族の声が賑やかでした。
突然の訪問に温かく迎えて下さりありがとうございました。
