Gochisousama for today -NOPI ノピ



New Year dinner with the people who are always there for me.
We had been to NOPI Restaurant, the latest venture of Yotam Ottolenghi,
famous chef / restaurateur for Ottolenghi,
the great deli / patisserie places in London.
NOPI locates in the heart of Soho area, in between Piccadilly and Oxford Circus.

日頃からお世話になっている方々と一緒に、新年会。
ロンドンの人気デリ&ベーカリーのOttolenghi(オットレンギ)で有名な
シェフで実業家のヨタム・オットレンギ氏が
一番最近に手がけたレストラン、NOPI(ノピ)さんへ伺いました。
お買い物で有名なピカデリーやオクスフォードサーカスの真ん中、
SOHO地区の中にあります。


They have collection of small tapas like dishes to share.
In London, up until 5-10 years ago It common to order and serve
individual dishes for each course,
however late trend in the restaurant industry has been "sharing style",
such as Tapas dishes at Spanish bar,
Izakaya, Japanese bistro pub food to share.
For me, growing up sharing the same meal with family and friends,
tt is such a natural and usual style to dine;
Yet for the people here, it's such a new and eye-opening concept.
Yummy food tastes much yummier when shared.

こちらの料理はタパスの様な小皿が中心で、
一人3皿前後をみんなでシェアするスタイル。
これまで、一人個々の料理を前菜、スープ、主菜、デザートとコースで
頼むのが一般的だったロンドンのレストラン業界ですが、
ここ5〜10年で、スペインバルのタパス料理や日本の居酒屋料理など
コースやフランス料理の概念に捕らわれない「シェア・スタイル」の
レストランが急増しています。
「同じ食べ物を共有する」のが当たり前の私にとって
あまりにも普通のスタイルなのですが、こちらの方にとっては
とっても新鮮なよう。
美味しいものは、シェアしたほうが絶対に美味しい。

Roasted aubergine, spiced yoghurt, dukkah, coriander
茄子のロースト、スパイス・ヨーグルト、ダカー、香草
(ダカーとは、エジプト起源の食べ物で、
すりつぶしたナッツや数種類のスパイスがまざった粉上のものだそう)


Presa iberica carpaccio, manouri, pine nuts
イベリコ肉のカルパッチョ、マノウリチーズ、松の実


baby octopus stew, mushed potato, corriander
ちびダコのトマト煮、マッシュポテト、香草



Seared scallops, fennel puree, apple salsa
炙り帆立、ウイキョウのピューレ、林檎のサルサ


Slow cooked pork belly, coco bean cassoulet, salsa verde
ゆっくり煮込んだ豚バラ肉、ココア豆のキャセロール、緑のサルサ


Seared prawns, fennel, white oregano, feta
海老の炙り、ウイキョウ、白オレガノ、フェタチーズ


Ox tongue, pickled sour cherries, horseradish cream
雄牛タン、チェリーの酢漬け、ホースラディッシュのクリーム


Rabbit pastilla
兎肉のパスティーラ
(Pastillaは、鶏やハト等の肉を、タマネギ、卵、アーモンドなどと一緒に
「ワルカ(Warka)」と呼ばれる薄い生地に包んで焼いたモロッコのパイです)


Hibiscus and tea smoked quail, cumquat and clementine relish
ハイビスカスと紅茶でスモークしたウズラ、金柑とみかん

no best or worst, All the dishes are so superb...to be honest.
forgot to photograph, but
Guava compote, streusel, cardamom yoghurt was also amazing...

抜かりのないバランス、正直に、全て美味しかった。
写真撮り忘れましたが、
グアバのコンポートとシュトロイゼル、カルダモン風味のヨーグルトも
本当に美味しかった…。

The creation of Yotam Ottolenghi is always about his origin, Israel spices and harbs.
His dishes are very simple and plain, yet combines with a pinch of spices such as 
cinnamon, nutmeg, cardamom, fennel, coriander and mint.
They gives completely different and new dimension to the dishes 
and make it so unique and special.
They are also great with matching with Sake and wine for sure...
I highly recommend his 2 cook books.

イスラエル人であるヨタム・オットレンギ氏の作品は、
馴染みのある食材や調理方法に、イスラエルなど中東独特の
スパイスやハーブ、食材を組み合わせたもの。
どれも食材の味わいに焦点をおいた淡白でプレーンな料理ながら、
フェネルやシナモン、香草、ナツメグやカルダモン、ミントなどの
料理に全く異なる側面を与えてくれるぴりっと個性的な香辛料の使い方が秀逸。
ワインや日本酒にも合わせやすい料理ばかりです。
彼の2冊の料理本も本当にお薦めです。

Reception at Emperor's Birthday / 天皇誕生日レセプション



On 8th of December, last month, I was honored to be a one-day resident Sake sommelier 
at "the Emperor's Birthday Reception",
the biggest party held at Japanese Embassy every year.
The room was filled with over 500 guests!

昨年の12月8日、英国ロンドンの日本大使館で毎年行う
最大のパーティ「天皇誕生日レセプション」にて、
一日専属日本酒ソムリエとして出張営業してきました。
今回のパーティは毎年行われる大使館最大規模のもの。
会場は500人以上ものお客様でいっぱいです。


End of last year, the Ministry of Foreign Affairs released the great news that
all the diplomatic establishments abroad such as an embassy
will serve Sake as a "national alcohol" to toast at the Emperor's Birthday celebration.
Coping with this news, I got offer to "spice up the Sake booth" on this day.
How can I not get excited?

昨年末に外務省より、世界中の日本大使館など在外公館の
天皇誕生日の祝賀会の際、乾杯を基本「日本の国酒」である
日本酒で行うという方針が発表されたばかり。
そんな嬉しいニュースも相まって、大使館の山崎さんより
「日本酒ブースを盛り上げて欲しい」という素晴らしいミッションを引き受けました。
これはもう頑張らない訳ありません。

This time we served 5 Sake from Tohoku region.
I prepared the Sake information sheet as above to give out.
My goal was that everyone who tried Sake for the first time or who is a regular Sake drinker
would taste the Sake from #1 to #5, and find their favorite one out of 5.

今回お客様に提供するお酒も東北の酒5種。
当日は上の各お酒の情報とティスティングノートの載った用紙を
準備して参戦しました。日本酒を初めて味わう人からマニアの人まで、
①〜⑤まで全て試してもらい、自分のお気に入りを見つけてもらうのが目標です。


I started to offer glasses of "LaChamte", sparkling Sake by Hideyoshi from Akita
to the guests who came in the entrance.
Because of its only 8% alcohol content, much lower than the average,
its fruity and sweet flavors and fine and long-lasting bubbles,
Anyone who tried loved the Sake by saying "I can't believe it's made by rice!"
I am so sorry to tell you this, but I got so competitive to the staff
who was offering champagne at the entrance.

会場の入り口で、秋田の秀吉さんの発泡日本酒「ラシャンテ」を
来館されたお客様に配る所からスタート。
アルコールたったの8%で甘口フルーティ、細かで持続性のある気泡に
「これ本当にお米から出来ているの?」と飛ぶ様な売れ行き。
シャンパンを配るタキシード姿のスタッフの方に
勝手に闘争心を燃やしてしまって、ごめんなさい。



On the right is Shirley Booth, the founder of British Sake Association.
She never left Sake booth; she brought so many friends of her to the booth and
introduced Sake for so long. impressive!

右側は英国日本酒協会のシャーリー・ブースさん。
日本酒ブースから離れずに、ご友人を代わる代わる連れていらして、
ずっと日本酒を紹介して下さいました。流石!



I was extremely happy to see many guests enjoying the
different characteristics and potentials of Sake this night.
Happy Sake and Happy me.

夫々のお酒の持つ個性や味わいの特徴、
その幅の広さを皆様楽しんでもらえたようで、
日本酒も私も幸せです。

Let's keep having toast with our national beverage, Sake!

Thoughts around 2012.




Happy 2012 Everyone!
みなさん、2012年が明けましたね。

The year 2011 to me was the year of "trial" and "mission"
as many other Japanese people's were.
Since March 11th, when everything changed its meanings,
I kept running in the dark by doing my best I could.
How I could reinterpret the definition of Sake descended by my ancestors
and introduce it in the new forms here in London.
This challenge will still continue.

2011年は、日本の多くの人がそうであった通り、
私にとって「試練」と「使命」の年でした。
全てのことが変わってしまったあの3月11日から、
どこで何をやるにしても、その意味を常に問いながら
暗中模索の中、自分のできることをやり続け走り続けた年でした。
「日本酒」という先祖から頂いた暖簾を、このロンドンという地で
どのように再解釈し、新しいカタチで紹介できるか。
その挑戦はこれからも続いていきます。


My keyword this year is "to sow seeds" and "to produce buds".
I would like to remain as much "Sake spirits" as possible in UK
before my returning to Japan this summer.
And to create and build new business, network or trend in new locations.
And lastly, I would like to clear my mission for the future.

今年のキーワードは、「種を蒔くこと」と「発芽すること」。
今年の夏の日本への本帰国に向けて、
英国に出来る限りの日本酒スピリットを残していくこと。
そして、新たな場所でのチャレンジのため、
自分で新しい事業モデルやネットワーク、流れを生み出し、築いていくこと。
そして更に、自分の使命を明確にすること。


Though I am still immature and unexperienced,
I wish to learn from all of you, and deepen the world of Sake journey with you all...

まだまだ未熟で未経験なわたしですが、
今年も様々な方々から多くを学び、
日本酒の旅をご一緒できることを心より願っています。
