Gochisousama for today -Viajante / ビアジャンテ




Viajante
. I wished to visit here so long.
This great restaurant by Nuno Mendes who also leads The Corner Room where I visited last month.
Its kitchen was so open that It looked like the stage of his special theater.


念願のビアジャンテ
先日伺ったザ・コーナールームを率いるヌノ・メンデス氏の自慢のお店です。
かなりオープン形式なキッチンは、まるで彼の特別舞台のよう。



Everyone has some dishes or flavors you would never forget,
but his creation was something that soaks you more and more after finished,
and keeps coming back to your mind a day after, and a week after...
It was the flavor of memory.

忘れられない味というのは誰にでもありますが、
彼の作品は、食べ終わった後にじわじわと染み込んで
翌日も、その翌日もそのことばかり考えてしまう…
そんな記憶する味なのでありました。

Goose barnacles and kombu
This stock is from tuna, made me feel sea waves.

烏帽子貝(エボシガイ)と昆布
このお出汁は鮪から取ったとかで、海の波のようでした。


This is how goose barnacles look like.
It named goose barnacles because people one believed that they were eggs of geese.
mysterious.

これが噂のフジツボ科、エボシガイ。
形が烏帽子に似ていることから、ついた名だそうです。
英語名はGoose barnacleというのですが、
昔はカモの卵と信じられていたことからついたそう。
奇妙。


Potatoes with yeast and lardo
You don't think often the dishes tasting yeast.
It is quite unusual, yet the somewhat Umami-like flavors of yeast that tingles your mouth
with something different from saltiness or acidity are addictive.

ベビーポテト、イーストとラード
イースト(酵母)を食べさせるという考え、なかなか無いです。
舌の上で、塩味や酸味とは違ったようにじんわりと反応して
すごく癖になる。


Bread and butter
left is smoked butter and pancetta & walnut bread,
right is with caramelized butter with bacon on top.

パンとバター
左側がスモークバター、
右がキャラメライズしたバターに炒ったベーコンが乗ってます。


Mackerel with lettuce and sour cherries
matching wine: Seresin Pinot Gris 2007, Marlborough

鯖とレタス、サワーチェリー


Crab with herbal broth and shimejii mushroom
with Brundlmayer "Kamptaler Terrassen" Gruner Veltliner 2009, Kamptal


The milk jelly on top connected all together.

蟹とハーブのソース、しめじ
上乗っているミルクゼリーが全てをうまく繋いでます。


Bread porridge with sweet corn, langoustines and girolles
with Bodegas Acustic, Acustic Blanc 2009, Montsant


The yolk was slow-cooked on top of olive oil for 70C.
loved it.

スイートコーン、ラングスティーヌ、ジロール茸のパン粥
オリーブオイルに浮かばせて、70℃のオーブンでじっくり焼いた卵黄と共に。
絶品。


Cod loin and tripe with onions crispy potatoes
with Benjamin Leroux Auxey-Duresses 2008


Until the end I could not understand what tripe of cod look like,
but its texture was so creamy and gelatinous,
plus the cod meat was almost uncooked and had amazing
as well with the previous dish, I was flying to the sky...

鱈のロイン肉と胃袋、玉ねぎとクリスピーポテト


鱈の胃袋?!と最後までハテナが抜けませんでしたが、
ゼラチン質に似たまったり感と、極めて生に近い鱈肉の食感が素晴らしく
前の皿に続き昇天しそう。

マルドナド地方のイベリコ豚、穀類とにんにく、マテ貝のソース


Pickled and raw cucumber with reduced milk sorbet
I'd never known cucumber could taste so fruity.

酢漬け&生のきゅうりと還元したミルクシャーベット
きゅうりがこんなに果実味のあるものなんて。


Beetroot with dark chocolate
with Les Vignerons  de Maury Maury 1928 Solera Vin Doux Naturel


Great match with caramelized dry beets and crumbled dark chocolate.
The first few bites were full of earthy & muddy characteristics coming from beets,
yet more you tastes, it became more refined and clean flavors.
how wonder-full.

ビーツとダークチョコレート
キャラメライズしたドライ・ビーツと
クランブル状になったダークチョコの渋みが独特な相性。
始めの一口二口は最高に根菜特有の香りで土臭いのに、
食べ進めるとどんどん綺麗になって、
最後はビーツの酸味とフルーツ味しか残ってない
なんて不思議なもの。


I will come visit its bar next time.
つぎはバーに来よう。

Wow, that's amazing! I never ate anything like any of that stuff. The chocolate beet thing is what I would really like. That's an excellent idea. And I like those bread shaped kind of like torpedoes, looks really cool. I think I would just eat the torpedo bread and chocolate dish. Everything else is way too advanced for me. He's like the Harry Partch chef or something. And my knowledge of food is like at the level of Britney Spears of something.

Waow, i'm amazed by how your pictures made me almost feel the tastes and textures...! I love how each dish is presented on some plate / piece of slate, wood, stone that suits it and magnifies it... Amazing.
