IWC & Sake Samurai Tour: 蓬莱泉(愛知) / Horaisen


I had been to International Wine Challenge and Sake Samurai Tour in the beginning of March,
It was such a reward to visit 5 different sake breweries in 5 prefectures,
my first destination, was Kitashitara-gun in Aichi prefecture,
to visit President Sekiya of Sekiya Jozo, the producer of "Horaisen" sake.

三月の初め、昨年末に僭越ながら頂いたサケ・コミュニケーター・アワードの賞品、
IWC&サケサムライさんスポンサーの酒蔵ツアーに行ってきました。
一週間で五県、五蔵を巡るというなんとも豪華なツアー、
最初の行き先は、「蓬莱泉」関谷醸造の関谷社長を訪ねて
愛知県の北設楽(したら)郡設楽町へ。


President Sekiya picked me up at the Toyohashi Station, and drove me 
for 1 hour and half to show his 20 hectare big rice field,
which produces 10% of the sake rice used for his brewery,
such as Yumesansui and Chiyonishiki, the local sake rice in Aichi.

豊橋駅でお迎え頂き、車で一時間半。
最初に連れてきて頂いたのは、20ヘクタールある自社田。
2004年から、愛知県の酒米「夢山水」や「チヨニシキ」など
蓬莱泉さん使用米の一割を栽培しています。


When visited, they were building the second green house for raising young rice plant. 
It was almost the season for seeding.
He is aiming to increase the size of his rice field to 40 Ha in the future.

伺った頃、二つ目の新しい苗用グリーンハウスが建てられているところでした。
もうすぐ種まきの時期。
自社田は40ヘクタールまで拡大するのが目標だそう。


Mr. Sekiya had graduated from Brewing Department at Tokyo University of Agriculture,
and worked at fertilizer company in Shizuoka prefecture before returning to his brewery.
He has been leading the local communities by showing his strong passion and responsibility 
to"Agriculture" in Japan, as well as protecting his family sake business as a president.
The brewery's rice field easily expanded to 20 Ha just by taking over the rice fields of
local farmers who had been facing the serious successor issues.
"Though we are trying to expand our rice field, however, if there's any need
we may have to take over the non-rice production like vegetable and fruit fields"
says President Sekiyta with a little anxiety.

東京農業大学の醸造科を卒業後、蔵に戻るまで
静岡県の肥料会社で勤務されていた関谷さん。
日本酒という家業を守りながら、これからの日本の「農」に関して
強い使命感と情熱を持つ地域のリーダー的存在です。
後継者問題に悩む米農家さんの田を引き受けただけで
あっという間20ヘクタールになってしまった蓬莱泉の自社田。
大きくしていく予定ではあるものの、お米意外の畑も今後は
引き受けなければいけないかもしれない…と不安も洩らしていらっしゃいました。


Arrived at Sekiya Jozo.
Shitara town, where the brewery locates was once famous for forestry and transportation of salt
from Toyohashi city to Nagano prefecture.
There is "Horaiji Mountain" close to the brewery, which the name of Horaisen sake came from,
(Unfortunately I couldn't see it because of rainy and cloudy sky on the day)
and also known as "water town" that has many water springs of super soft water.

関谷醸造にやってきました。
蔵のある設楽町は、昔豊橋から長野へ塩を中継する運送業、林業で栄えました。
この日は天気が悪く残念ながら眺めることができませんでしたが、
「蓬莱泉」の銘柄名の由来になった「鳳来寺山」が近くにそびえ、
超軟水の湧き水が多く出る「名水の町」でもあります。

上部に冷却器の着いている精米機。



This rice washing and soaking machine has a scale on the bottom
and controls water level automatically.
この洗米浸漬装置は、下に計りがついていて
自動で浸漬加減を調整してくれます。


And this is a monster.
named "Tojisan", automatic Kojimai making machine
by moving Koji-box automatically to massage and even out the temperature of each box.
It was developed by Rihaku brewery and Mitsubishi Nouki company,
and several brewery used this today.
So different view from the traditional Koji making room.

そしてこの機械が凄者。
自動で麹米を作ってくれる製麹機、その名も「杜氏燦(とうじさん)」です。
立体駐車場のよう(?)に時間毎に麹蓋を自動で手入れして積み替えてくれ、
人の手が一切かからないというもの。
李白さんと三菱農機さんのコラボで開発されたそうで、
数々の蔵元が使用しているそうです。







I love looking at Moromi. I cans stare at her changing colors and shapes all day long.
ずっと眺めていれる、様々な色と姿のモロミちゃん。


This pressing machine is Sekiya special as well.
He had ordered effluent treatment company to develop special machine
with lighter weight and structure that avoid the remaining smell from the metal frames.

こちらの連続上槽機もまたスペシャル。
金具でろ板と布を挟む構造が一般的ですが、
こちらは金具が無く、軽量且つ匂いがつきにくい構造になっているそうです。
工業用の排水処理装置を作る会社に特注で作ってもらったそう。


Pressed sake is divided into three stages "Arabashiri", "Nakadori" and "Seme",
yet at Sekiya Brewery does not press the last "Seme" part since they believe 
that Seme part of saketends the flavor of sake too strong and rough.

絞りのタイミングによって「あらばしり」「中取り」「責め」と
三つの段階があるのですが、最後に搾る「責め」は
味が濃く、荒くなるという特徴があるため、関谷醸造さんでは責めは取らない方針です。


Other than the things above, there were so many special tips in the brewery;
special air conditioning system to eliminate and sterilize bacteria,
usage of house made Shochu instead of artificial distilled alcohol,
massive storing space which can hold about
3000 koku (300,000 magnum sake bottles) of sake to mature,
selling sake by measure at their store front, that sells 30,000 litters per year,
half of the employee being women,
and installing a rice inspection equipment to scale the amount of protein, size and radiation level.
Every second at brewery, i was amazed by his ideas in detail.

上で紹介した以外にも、乾燥・除菌・殺菌もしてくれる特殊な空調管理、
醸造アルコールの代わりに使用している自家製の米焼酎、
3,000石も貯蔵できる貯蔵施設、
年3万リットルも売れるという店頭の量り売り、
蔵人の半分が女性で成り立っている風土、
お米のタンパク質やサイズのばらつき、放射能値を計測できる検査装置の導入など
多くのこだわりや徹底を感じる酒蔵で、終止感動しっ放しなぴみえんたでした。



Tasting the range of Horaisen sake.
All the selection has quite feminine and elegant characteristics with lower acidity,
and has pleasant bitterness at the end.
Personal favorite was "Wa" Junmai Ginjo,
and I was happy to taste "Kuu" Junmai Daiginjo again
which my big boss Sayaka san loves.
"There isn't much to day at first impression, yet I wish to be the sake
which sells the most at the end of the party" says Mr. Sekiya.
Learning his calm and gentle personality with burning fire inside,
Now I understand more what makes sake so special.

関谷醸造さんのお酒セレクションを試飲。
水質の影響か、全体的に女性的で酸が低め、上品な印象。
最後に残る爽快な苦みも特徴的でした。
「和」純米吟醸が美味しかったなぁ。
ロンドンの大先輩、さやかさんが大好きな「空」にも再会でき嬉しかったです。
「First impressionは少ないけれど、宴会の最後に一番減っている酒でありたい」
と話す関谷社長。穏やかで真摯、素朴で派手ではないけれど、
活動的で静かに燃える炎を持った彼の人柄が
彼のお酒をこれだけ特別なものにしているのだ、とひとり頷いてしまいました。

April / 卯月



Already April, I think someone is fast forwarding the clock.
I cannot stop smiling finding all flower blooming on every corner of the city.
In old Japanese, this month was called "Uzuki",
There are many stories over the origin of its name,
yet I like the idea of Uzuki being the "Rabbit month"
since it is the forth animal of the twelve zodiacal signs.
In Japan, April is the time all schools and company starts new year.
I wish you all to take great re-start in this season
when your talents and energy blooms after the long cold winter.

誰かが時計を早回ししているの?もう四月。
太陽の日差しが優しくなってきて、
街中のつぼみの開花に思わず笑顔になる季節。
「卯月」の言われには色々説があるようですが、
個人的には十二支の四番目が「卯」だからという説が、
春の草原をはねる兎が目に浮かんで好きです。
四月は、日本では入学式や入社式の月。
「春眠暁を覚えず」なんて世間では言いますが、
冬のあいだ眠っていた新しい才能やエネルギーが眠りから覚める時期に、
心も体も、新鮮なスタートを切ってくださいね。

*Sake of the month:
Since April is a season for Hanami (cherry blossom viewing) in Japan,
I would like to recommend to enjoy these events with
warm "Dewazakura, Ginjo 'Ouka'" to warm you up.
Dewazakura is from Yamagata prefecture and a pioneer of Ginjo style sake.
Bouquet of cherry blossoms and spring flowers with
soft and silky textures. Aromatic yet great with food.
We sell it warm as house sake at Roka and customers love it.
Let cherry blossom blooms in your palate by tasting this sake in this season.

◆お薦めの日本酒:
暖かくなったとは言えまだ朝晩は冷え込むお花見のお供に
山形の「出羽桜 吟醸 桜花」のぬる燗はいかがでしょうか。
吟醸酒のパイオニアとして有名な出羽桜さんの代表作、
蔵オリジナルの小川酵母からくる桜を連想する華やかな香りと
なめらかでシルクのような口当たり、食事に邪魔にならない味わいで

report 2/2: Sake Award @Hyper Japan Spring 2012










(Event report 1/2 is here)
All brewers were so passionate introducing their sake to the participants,
three days straight, in chilly event hall without much breaks.
participants are so serious about tasting as if they are responding to the brewer's passions.
It is such a great experience to taste sake with its makers over dialogues,
and I wish to make these opportunities happen more in the UK.
1,034 people participated in total in Sake Award in these 3 days.

アワード結果を懸けて、蔵元の方々も一生懸命にPR。
3月のまだ肌寒い会場で、3日間休憩も殆どなしで頑張って下さいました。
その熱に応えるかのように、参加者の方々も熱心にティスティング。
全部で1,043名の参加者の方が酒アワードブースを訪れたそうです。
蔵元さんと対面し、コミュニケーションを取りながらお酒を味わう。
そんな機会、ロンドンでもっとあっていいと思います。

Dassai 23 had won the four of the seven awards,
including the top People’s Choice award.




Congratulations all winners!
even the ones who could not win any award,
I believe they could feel the potentials by growing lots of their fans in the UK.
This was their first challenge and though there will be much more to improve,
 I am looking forward to see this event growing in the future!

受賞蔵のみなさん、おめでとうございました!
今回惜しくも受賞できなかった蔵の皆さんも、
沢山の英国人ファンを増やされ、今後の手応えを感じてもらえたと信じています。
今年が初めての取り組みでしたが、
イベント後の参加者の導線や参加蔵元さんへのリワード、
知名度やブランディングなどもっともっと改善していって
今後更に素敵なイベントとなることを願っています!
