Matsuri / 祭



昨年に引き続き、二回目のジャパン祭りが今年もスピタルフィールズで行われました。
It was second year of Japan Matsuri Festival in Spitalfields.




私は今年はJalux UKのブースのお手伝いとして参加。
おじいちゃんのお酒をたくさん売ったよ!
This year I had helped to sell Sake at Jalux UK's stall.
I had sold many of my grandps's Sake!


New Season: Hiyaoroshi / ひやおろしの季節

気がつけばもう秋。今年は日本では猛暑の夏だったようですが、

ロンドンは夏と呼べる天気はたった数週間、なんとも涼しい夏でした。
そんな中でも、普段歩く並木道の木々の色や果実、日の長さ、吹く風のにおいにも
秋の知らせが感じられるようになってきました。
夏好きの私にとっては寂しいばかりの秋でしたが、
今年の秋は、なんだかほっくり嬉しい。
それはもしかしたら、日本から秋の実りが届いたからかもしれません。

I realized today, that it is already in autumn.
This year Japan was experiencing the hottest summer I heard.
on the other side, London had only a couple week of what we can call summer.
I, as a summer person, was always sentimental to welcome autumn in the past,
yet this year, it feels different.
This bizarre feeling may come from my discovery of fall, by colors of trees and fruits on my everyday path, or the length of day/night, or the smell of the winds go by.
It may be come from this happy harvest delivered from Japan.

Zuma had changed seasonal Sake menu to Autumn Hiyaoroshi selection last weekend.

個人的には七本槍をぬる燗にしてあがるアップルパイのような甘い香りと、
風の森の開封後、日々刻々変わる味わいのバランスがたまらない。
お近くにいらっしゃる機会があれば、是非お試しにきてください。

Personally, I love the aromas of apple pie-like roastiness of warm Shichihonyari,
and Kaze no Mori's ever-changing balance of flavors.

Dewazskura Seminar



大信州さんに引き続き、出羽桜酒造の仲野社長が
ズマに日本酒セミナーでやってきてくださいました。
今回は、World Sale Importsの麻微さんに通訳をお願いしたので安心。
Following to Daishinshu Brewery,
President Nakano of Dewazakura Brewery came to Zuma for Sake seminar.
Asami san of World Sake Import came to translate this time, Thank you!

今日ティスティングで持ってきてくださったお酒は、
桜花(おうか)吟醸、
出羽燦々(でわさんさん)純米吟醸、
一路(いちろ) 純米大吟醸、
そして、五年氷点下熟成酒の雪漫々(ゆきまんまん)の四種類。
雪漫々以外は、全てズマで扱っています。
私は、雪漫々の5年を経ても透明な爽快感と奥行きにびっくり!
The 4 difefrent sake he had brought us was:
Ouka Ginjo,
Dewasansan Junmai Ginjo
Ichiro Junmai Daiginjo
Yukimanman, Aged for 5years under -5℃.
Other than Yukimanman, we have all the other sake on the menu at Zuma.
I was amazed to taste Yukimanman, so clear and clean yet deeply layered!


ズマでの勤務の長いスタッフでも、
普段扱うお酒の蔵元と会える機会は早々ないもの。
味わいの違いや日本酒の知識を学ぶのも勿論ですが、
蔵元の方を目の前にして、彼らの情熱や想い、
歴史などその蔵の「暖簾」を肌で感じれる唯一の機会。
このように一人でも多くの日本酒大使を生み出していくことが、
私たちロンドンにいる数少ない日本酒ソムリエの使命だと思います。

Even the staffs who has worked at Zuma for many years, 
have not often met Kuramoto (sake brewers).
It is obviously important for them to learn and taste different Sake,
but also it is the only chance for them to feel the passion, mind, history 
and goodwill of each Kuramoto directly from their voice.
As a one of few Sake sommeliers in London, I believe it is our responsibility 
to create as many "Sake ambassadors" as possible by making opportunities like this.

Meet Kuramoto, Hasegawa Tasting



Supported by the Embassy of Japan and the Japan Foundation in London,

Hasegawasaketen presented Meet Kuramoto (蔵元 sake brewers) events.
日本大使館日本交流基金の協賛のもと、
はせがわ酒店がロンドンにてMeet蔵元イベントを行いました。


Sake dinner at Mitsukoshi Restaurant in Piccadilly.
30 master brewers and more than 200 different kinds of Sake
from all over Japan had arrived for this event!
ピカデリーサーカスの三越レストランでのディナー。
全国を代表する30もの蔵元と、200種類以上もの日本酒が勢揃い!









Every faces represents the qualities of Sake.
蔵元の顔が、ひとつひとつの日本酒を現しているかのよう。

It has been a year since I saw President Hasegawa and executive producer.
And they are opening up the 5th store in Tokyo soon! right on!
長谷川社長と専務に会うのも1年ぶりです。相変わらずのご活躍ぶり。
近日中に5店舗目をオープンさせるとか。すごい!

I was super-happy to see Sato san of Jokigen in Yamagata, where I had visited this June.
今年の6月に見学に行かせていただいた、
山形の上喜元の佐藤さんに再会できてすっごく嬉しかったです。


The day after next, Sake Tasting & Lecture event at the Japan Foundation.
翌々日は、日本交流基金でのテイスティングとレクチャーに。



Free event helped to fill the room with hundreds of people!
無料のイベントだったこともあって、会場は溢れんばかりの人々!

I got to meet Satou senmu of Aramasa Brewery, Akita, who happened to be my relative!
He came back to brewery three years ago, and have changed the brewery dramatically. he also started an unit named NEXT5, which is made up by young brewers of 5 different Kuramoto to create new image and quality of Sake for next generations.
私の親戚でもある、秋田の新政酒造佐藤専務にも挨拶できました。
彼は3年前に蔵に戻って、秋田の5つの酒蔵の新世代の仲間とNEXT5というユニットを運営、新政のお酒も革新的に変えているという期待の星。

There were also blind tasting competition and sake dinner events in several restaurant in London.
It was such a exciting week.
President Hasegawa's blog also talks about their events in London.

Sake family

日本で半年お世話になったはせがわ酒店による
ロンドン初の試飲会が行われました。
はせがわファミリーの蔵元さんたちも勢揃いで
ZUMAに遊びにきてくださいました。

Hasegawasaketen, the sake store in Tokyo I worked for half year,
came to host their first time Sake tasting events in London.
Many Sake breweries of Hasegawa family came to visit Zuma for their first night.

仕事終わりに毎日10種類以上のお酒を唎かせてもらって
たまったテイスティングノートは私の宝物。
店頭販売にいらっしゃる酒蔵関係者や
日本酒マニアの先輩方から色んな話を聞いたり、
一升瓶ケースを楽々担げる様になったり、
お客様の特別な贈り物の日本酒を一緒に考えたり。
はせがわ酒店で毎日日本酒と向き合っていた半年間は、
短かったけれど今の私のベースを築く上でとっても貴重な時間でした。

Things like my treasure tasting note, 
I created by tasting more than 10 different Sake everyday after work.
Things like all the talks and A-Z about Sake, 
I learned from my Sake-maniac coworkers and visiting brewers.
Things like me being able to carry cases of magnum sake boxes easily,
Things like the memories I chose the customer's gift Sake for their precious occasions,
Though it was only six month I worked for Hasegawa,
things like these had became the important base of my sake career.

日本酒業界でまだまだ歩き出したばかりの私ですが、
日本酒に関わる皆さんと出会うと、
いつも不思議な「ファミリー感」を抱いてしまいます。
日本酒という日本の伝統や美を継承し続けるための家族。
そんな日本酒ファミリーが、私はとっても好き。

I am only a baby started walking in sake-industry,
but whenever I saw someone from the industry, 
I always get this strange "family-ness" feelings.
A family that to pass on the tradition and beauty of Sake.
I love being a part of this family.

手いっぱい。大信州セミナー / Handsfull. Daishinshu Sake seminar


先週は、「インターナショナル・ワイン・チャレンジ(IWC)2010
のSAKE部門の入賞酒の表彰式がロンドンで行われ、
入賞された蔵元の皆様とお会いする機会をいただきました。
そのひとつの蔵、長野の大信州酒造の田中様が、
ZUMAに日本酒セミナーのため来てくださいました。

Last week there was an award ceremony for "International Wine Challenge (IWC) 2010" in London.
There are Sake category in this competition and I've got to see many breweries selected to this award came all the way from Japan.
One of them, Tanaka president of Daishinshu Breweries Inc. came to Zuma for Sake seminar.

持ってきてくださったお酒は3種。
現在ZUMAの季節商品で取り扱い中の「別囲い純米大吟醸」、
「厳選純米吟醸山田錦」、そして写真の右の「手いっぱい 純米大吟醸」が
IWC2010のゴールドメダル受賞酒です。

He brought three different Sake;
"Betsugakoi JUnmai Daiginjo", which we currently have on the seasonal menu,
"Gensen Junmai Ginjo Yamadanishiki",
and Gold medal award-won Sake for IWC 2010,"Teippai, Junmai Daiginjo".


「手いっぱい」という名の通り、彼らのお酒作りは
手をかけられるところは全てかけた自信作。
大信州のお酒は全てびっくりする位フレッシュで洗練されていて、
デリシャスアップルとも言える凝縮した果実味いっぱいでした。
田中社長は私たちに、人間の都合ではなく、酒の都合で酒造りをすることの大切さを教えてくださいました。
「私たちの蔵に来て搾りたてのお酒を唎いてもらえたら、
ここにいる全員を感動させられる自信があります」
穏やかに、しかし力強い口調で田中社長は語りました。
「しかしその感動を蔵から離れた食卓やレストランで同じ様に感じてもらうのは難しい。
そこの距離を縮めていくのが、今後の私たちの課題です。」
常に次の課題や手をかけられることを探る姿勢と情熱に、心を動かされました。

"Teippai", literally means "Hands-full" in Japanese.
All the Daishinshu Sake commonly had amazingly fresh, sophisticated, and condensed fruity flavors such as delicious apples.
Mr. Tanaka talked us about how much they had cared for their sake from growing rice crops to bring them to the table.
Sake production is exhausting, he said. But if we thought about its best,  they will give us back.
"If you come visit our brewery in Nagano, I am 100% positive that I can amaze you by our freshly brewed Sake." he continues, "However, it is not always easy to feel the same way if you taste them on the table at home or restaurant which are far away from there. Our focus at this moment is to shorten the distance between."
Gently but strongly, Mr, Tanaka passionately showed his next target to care for.
I felt very honored to present their sake at this restaurant.
